Summertime Smoothie-Time

Mornings are hard. Like so hard.

Breakfast is the most important meal of the day but it can be neglected for the sake of a few more minutes of sleep. Efficiency is key to getting all the nutrients you need to start your day before you hit the road and whats more efficient than a smoothie? If you find yourself stuck for time in the morning try this eye-healthy recipe:

  • 1/2 cup sliced cucumber (skin on) **

  • 1 cup frozen pineapple *

  • 1/2 banana

  • 1/4 cup coconut milk

  • 1/2 cup water

  • 1 medium lime, zested + juiced

  • 1 large handful greens (spinach or kale)**

*An excellent source of Vitamin C - scientific evidence suggests vitamin C lowers the risk of developing cataracts.

**An excellent source of Lutein and Zeaxanthin - which can help protect your eyes from harmful high-energy light waves like ultraviolet rays in sunlight. Studies suggest that a high level of both in eye tissue is linked with better vision, especially in dim light or where glare is a problem. Diets rich in these two nutrients may help hold off age-related eye diseases.
